Phytate: the mineral binder that is also an antioxidant
Phytic acid — inositol hexakisphosphate — is how a seed stockpiles phosphorus for the seedling it intends to become. It has six phosphate groups arranged around a ring, and that arrangement is very good at grabbing positively charged mineral ions, which is the entire story of phytate in human nutrition.
General information, not a diagnosis. Iron deficiency and zinc deficiency are diagnosed with blood tests and have causes far more important than phytate, including blood loss that needs investigating. Do not treat suspected deficiency by rearranging bread; get it tested. Iron supplements taken without a confirmed deficiency can do harm.
What phytate binds, and what it does not
In the gut, phytate forms insoluble complexes with divalent mineral cations — zinc and non-haem iron most importantly, calcium and magnesium to a lesser degree — and those complexes are not absorbed. Humans produce very little intestinal phytase, so unlike ruminants we cannot simply digest our way past it.
The crucial qualifier is non-haem. The iron in meat, fish and poultry is haem iron, bound inside a porphyrin ring, and phytate does not touch it. So a meal of wholegrain bread and lentils has a real phytate problem for its iron; the same bread beside a piece of fish does not, for the fish’s iron.
Because the effect is about ratios rather than absolute amounts, nutritionists assess it as a molar ratio — phytate to zinc, or phytate to iron — and international zinc guidance grades whole diets as having high, moderate or low zinc bioavailability on that basis. A diet built on unleavened wholegrain flatbread with little animal food sits at the difficult end; a mixed diet does not.
Processing that actually removes it
Every traditional grain and legume technology in the world does something about phytate, which is unlikely to be a coincidence. Soaking activates the seed’s own phytase, and discarding the soaking water carries some phytate away. Sprouting takes the same enzyme further. Fermentation is the most effective of all: a genuine long sourdough fermentation degrades the large majority of the phytate in wholemeal flour, because the acid conditions are close to optimal for phytase.
This is why sourdough bread and fermented porridges are not just a fashion. It is also why a fast-risen commercial wholemeal loaf and a two-day sourdough made from the same flour are not nutritionally identical.
A second, entirely different route is to leave the phytate alone and improve absorption anyway. Vitamin C in the same meal substantially increases non-haem iron absorption, and so does a small amount of meat or fish. Tomato with the beans, lemon on the lentils, peppers in the salad — these are not decorations.
The case for phytate
Phytate spent two decades being called an antinutrient, which is a description of one effect rather than an assessment. It is a strong antioxidant and a chelator of iron in the free radical-generating sense as well as the nutritional one. Higher intakes have been associated with lower rates of calcium-oxalate kidney stones, plausibly because a molecule that binds calcium and inhibits crystal growth is doing in the urine what it does in the gut.
It also travels in exceptionally good company. The foods highest in phytate are wholegrains, legumes, nuts and seeds — the foods with among the most consistent associations with better cardiovascular and metabolic outcomes in cohort studies. Removing them to avoid phytate is a very poor trade.
So the practical position is narrow. If you have diagnosed iron or zinc deficiency, or you eat a diet dominated by unleavened wholegrain staples with little animal food, phytate is worth managing with soaking, sprouting, sourdough and vitamin C. Otherwise it is a feature of foods worth eating.

| Band | Mitä se tarkoittaa | Esimerkit |
|---|---|---|
| Highest | Bran, seeds and legumes — the parts of the plant where phosphorus is stored. These are also the foods where soaking, sprouting and fermentation pay off most. | Wheat bran, Oat bran, Flax seeds, Sesame seeds, Sunflower seeds, Almonds, Walnuts, Soybeans, Kidney bean, cooked, Lentils, Chickpeas |
| Moderate | Whole grains and pseudocereals. Present, but usually managed by ordinary cooking and a mixed diet. | Oats, Brown rice, Buckwheat, Quinoa, Rye bread, Peanuts |
| Low or none | Refined grains have had the bran removed with the phytate in it, and animal foods never had any. Yeast-leavened white bread is low twice over. | White rice, White bread, Potato (boiled), Carrot, Apple, Banana, Chicken breast, Egg (hard-boiled), Whole milk, Cheddar cheese |
Mikä muuttaa lukua
- Soaking and discarding the water activates the seed’s own phytase and carries part of the phytate away.
- Sprouting takes that further, which is why sprouted grain products measure lower.
- Long sourdough fermentation degrades the large majority of phytate in wholemeal flour — far more than a fast commercial rise.
- Vitamin C in the same meal raises non-haem iron absorption enough to offset a lot of phytate.
- Haem iron from meat and fish is unaffected, and a small amount of it also improves absorption of the non-haem iron beside it.

Puhuminen jollekulle joka voi oikeasti testata
Nothing on this surface is personal medical advice. If a food genuinely makes you ill, if you have had a kidney stone or a gout attack, or if you are considering removing a food group from your diet, the person to talk to is your doctor, pharmacist or a registered dietitian — they can test for the things that can be tested for, which a table cannot.

Usein kysytyt kysymykset
Is phytate bad for you?
Not in a mixed diet. It reduces absorption of non-haem iron, zinc and to a lesser degree calcium, which matters if you are already deficient or eat a diet dominated by unleavened wholegrain staples. It is also an antioxidant, and the foods that contain it are among the best-evidenced foods there are.
Does soaking beans really help?
Yes, on two counts: it activates the seed’s own phytase, and discarding the soaking water removes part of what has broken down. Sprouting and fermenting go further still.
Why is sourdough different from ordinary wholemeal bread?
Because a long acid fermentation is close to optimal conditions for phytase, and it degrades most of the phytate in the flour. A fast-risen loaf from the same flour keeps far more of it.
Does phytate block iron from meat?
No. Meat, fish and poultry supply haem iron, which phytate does not bind. The interaction is with non-haem iron from plants and supplements.
Should I avoid wholegrains to protect my iron?
No. If iron is genuinely low, that needs testing and a cause, not a diet rearrangement — and the fix is usually vitamin C with meals, treatment of the cause, and supplementation if prescribed, not the removal of wholegrains.
